I'd recommend going camping and hiking for the weekend at Wellington National Park (about 2 hours drive from Perth). Check out Honeymoon Pool, Potters Gorge and Wellington Dam.
If camping isn't really up your alley, I'd suggest giving 'glamping' a shot at Margaret River (approx 3 hours from Perth) http://www.wharncliffemill.com.au/safari_tents.html.
