Are the residents of Mascot unduly effected by aeroplane noise?

No, actually very little. Just check the aerial views of the runways at the airport. You can see the direction the planes will go. All the new developments near Mascot station, for exemple, are much less affected than anywhere in the Inner West.

The only areas affected more than other in mascot are the homes over the East -West runway. Although this runway is not used as much when it is you can definitely feel it, the homes closest to the airport are all insulated (govt initiative 10 or so years ago) so the plane noise inside the home does not affect you and any home that has been renovated in the last 5 years in Mascot tends to have some extra level of insulation to ensure homes even not directly affected with planes flying immediately above them have a certain level of soundproofing installed.
