Hong Kong Dim Sim on Kingsway is an accurate depiction of true Hong Kong service in that it is fast, furious, quite cheap, high turnover and not a lot of chat / banter / customer service :P Fresh produce with super high turnover and frozen dim sims to takeaway too if you so want. Unique in that because the place is tiny, you order using a tickbox on a form and they bring it out to you.
For a sitdown experience which is very unique with trolley service, try Secret Kitchen in the Village Walk / Cinema area. A bit pricier but some unique items on their menu.
