Snowy Mountains Truffle Orchard grows cool climate Black Truffles which are highly suited to the areas extreme elements consisting of cold winters with abundant frosts and warm summers. They grow on the roots of certain inoculated host trees under the ground and need to be detected by highly trained dogs.
All of the hard work has been done. Preparing the soil for some months, sourcing inoculated seedlings, installing a tank and irrigation, erecting an 8ft high fence and finally in the spring of 2007, planted 800 tiny oak trees. The orchard has grown according to plan with production commencing in 2013 and developed exponentially year on year. Winter being the harvest time coincides perfectly with high demand at local restaurants during the ski season.
