Actually, what springs to mind are the kayaking lessons offered by the excellent Hudson River Recreation. They have one class, in particular, called Kayak Fundementals which is three hours long and only $99.00. The good part about it is that they are held at Tarrytown Lakes which is certainly wayyy less intimidating than beginning on the Hudson River.
