During the week street parking is pretty easy to find. On the weekends Chinatown is full of tourists so your best bet will be using the parking garages in the neighborhood.

I wouldn't say it's impossible, and it obviously depends on the day/time, but I've found it to be a bit difficult at times to find parking on the weekend. Of course, this is true of a lot of Chicago neighborhoods. Chinatown does have a pretty big parking lot for visitors though, since it is a big tourist destination, and I think it's only a couple dollars for a few hours of parking, which is hard to beat in the city.
