Head to the Dutchess County YMCA Rock Gym in Poughkeepsie for indoor rock climbing. For the real McCoy, go to the Shawangunk Ridge (the Gunks), accessible from the Mohonk Preserve in New Paltz.

I don't believe that there's anywhere outdoors for rock climbing in Hopewell, mainly because there isn't much of anything to climb. I haven't heard of anywhere to do indoor climbing in HJ, and the only places of which I know you can do that are across the river in New Paltz (which also has outdoor climbing). Might take upwards of 30-40 minutes to get there.
