I attended St Ives Primary and High Schools (close to Pymble and probably the closest High School to the region) with my Cousins and Sister attending both Pymble Public school and Pymble Ladies College (Private school), respectively. All of us, as a result, received Tertiary education which I believe is up to the individual and can be achieved in all regions accross Australia including Bella Vista (So academically there is no difference in my opinion). The difference between the State Schools and Private Schools (Which Pymble / Ku-ring-gai region are famous for), in my experience, is both the Prestige (Pymble Ladies College is World Class) and the networking factor. My High School (St Ives High School) has only had one networking event in the last 14 years, where my Sister's school (Pymble Ladies College) have them periodically EVERY YEAR. This allows your Child to maintain relationships with their peers and expand their possibilities in obtaining a jobs (sometimes it's about who you know). This network is connected throughout the world through the Pymbulletin magazine (Pymble ladies College publication) and other web based portals and if used, can significantly assist in your Children's career development.
Sporting and extra-curricular activities are dependent on the individual with both Pymble and Bella Vista offering similar clubs locally.

To Answer your house question, Pymble historically is viewed as a prestigious area to live and also topographically is within the highest points of Sydney. It has a Train Line with an approximate ride time of 30 mins into the City (with or without traffic) and shares many national parks, shopping centres and strong road networks that have been established over many years. There are many different styles of accommodation including Apartments to World Class Stately Homes and Historical buildings. You can buy large homes in Pymble if that is your criteria but the price points will differ due to location factors which contributes to higher land values in comparison to Bella Vista.
Bella Vista, on the other hand, have large parcels of land aswell but it's a newer area with respective mix of project housing and bespoke design family homes. In my opinion I don't believe that the networks support the growing population out there in comparison to Pymble. There may be a train line IN THE FUTURE for those commuting to inner-city areas but until then most residents will have to drive through the M2, Lane cove Tunnel and Harbour Bridge with the tolls, fuel and traffic adding up in the long run!

Well, at the risk of sounding a little bias toward Pymble, this part of Sydney is well known for its private schooling and of course some very popular and well funded public schools. If i were to give a simple black and white answer, i would say Pymble.
