Climate and dog-friendly activities

We're thinking of moving from SE Queensland to Inverell to escape the heat and humidity up here. Can anyone please tell me what temperatures and humidity levels to expect in Inverell? Would it be considered to be the same demographic as Tamworth which is excessively hot in summer and cold in winter?
Another question is dogs. We can see that there are a lot of nearby NPs, Dams and Reserves near Inverell, but how dog-friendly are these places regarded to be? Can anyone give us information on places we could take the dogs at weekends as we are both keen hikers, and the dogs love swimming.
