What's a quality restaurant in East Fishkill that would be appropriate for an anniversary?

Villa Nigrelli is lovely and has very good Italian food. Also Tomas Tapas Bar is excellent and has a very good menu and special feel. (Tomas has a Wappingers Falls P.O., but is in the Township of East Fishkill). For a special dinner, though, I love to go to neighboring Fishkill to Il Barilotto, Sapore, or Dutchess Biercafe.

My personal favorite restaurants in East Fishkill are the Blue Fountain and Lillianna's Italian Steak House. These are 2 great choices to celebrate an anniversary.

Suzie's right, the pickings in East Fishkill are somewhat slim for quality restaurants. Hopewell Junction isn't too far away, and in addition to Le Chambord I'd suggest checking out the Aladdin Cafe. It's Middle Eastern food, which should give you a nice, but different flavor for an anniversary ;)

For a better-quality restaurant to celebrate an anniversary, I'd go to nearby Hopewell Junction and try either Le Chambord or The Blue Fountain (Italian.) East Fishkill has some decent restaurants, but these two in Hopewell are better for a special occasion.
